Arte, alta cozinha e ensino juntam-se no The Artist, agora transformado em A Escola by The Artist. O restaurante que dá oportunidade aos alunos da Escola de Hotelaria e Turismo para mostrarem o que valem está mais arrojado e exigente. Também com o cliente.

Funciona como um hotel-escola na antiga Soares dos Reis, escola de artes que durante várias décadas ali teve casa e por onde passaram alguns dos mais carismáticos artistas portugueses. Essa herança está nas paredes do hotel, do bar e do restaurante. Mas agora, as telas são os pratos que saem da cozinha dirigida por Hugo Dias, que orienta os alunos da Escola de Hotelaria e Turismo, mesmo ali ao lado.

A Escola by the Artist chamava-se, até há bem pouco tempo, apenas The Artist. Mudou de nome porque também quis mudar de projeto gastronómico. Ainda que a vertente de formação já estivesse presente – pela cozinha já passaram cerca de 1800 alunos ao longo dos últimos quatro anos – optou-se por se desenvolver um programa mais arrojado, onde as técnicas de alta cozinha são exploradas ao máximo.

«Eles trazem ideias e juntos tentamos concretizá-las», explica o chef. A técnica serve aqui também para fazer brincadeiras – trabalhar com texturas, sabores e cores, de forma criativa, para haver sempre algo de surpreendente em cada um dos momentos da refeição, que aqui se chama «teste sensorial».

Um criativo prato de salmonete, rabo de boi, romã em calda de wakami e katsuobushi abriu o menu de apresentação d’ A Escola. Provavelmente, não será possível voltar a provar esta combinação, pois todos os dias o menu muda, conforme as criações dos alunos e os produtos disponíveis. O almoço funciona com menu executivo (9,50 euros) mas é ao jantar que toda a potencialidade dos estudantes se revela. De cinco ou sete momentos, os menus percorrem uma variedade de produtos e de referências sem fronteiras. No final, o cliente é convidado a preencher um inquérito onde avalia tanto a comida como o serviço, ou não fosse este um restaurante formação contínua.

Rising Australian producer Kito’s EP, HAANI, is out. The EP’s focus track “Love Hurts” featuring Tara Carosielli as well as “Pamplemousse” featuring Hudson Mohawke (TNGHT, ANOHNI, A$AP Rocky)

Kito’s most recent single “Strawberries” featuring Trinidad James, Elley Duhe and Kodie Shane was released to critical praise: Complex proclaims, “Kito has returned with a bright new single…that should add some warmth to your playlists before fall arrives,” while Ones To Watch furthers, “Underneath transfixing, wobbling production, each and every vocalist finds their own place to shine.”

The new music marks Kito’s first solo releases since 2012, a return to her own project after spending years becoming a sought-after producer in London working with the likes of Mabel and Jorja Smith.

A 2017 breakup led Kito back to her remote, Australian seaside hometown where she began work on the HAANI EP. Her most accomplished release to date; the record includes collaborations with Carosielli, James, Duhe, Shane, Mohawke, Broods and Shy Girls.

For Kito, a teenage obsession with Fruity Loops turned into a career when she sent Diplo her demos and in return received an invitation to release her music on Mad Decent.
