Sofia Stern nasceu na Alemanha em 1919 e fugiu para o Brasil nas vésperas da Segunda Guerra Mundial. Filha de um judeu cego afinador de pianos e duma enfermeira que a abandonou ainda bebé, Sofia terá sido sempre tratada com o desprezo e humilhação que os alemães reservavam aos judeus.

Ingredientes:
220 g de lombo de novilho
20 g de mostarda em grão
2 gema de ovo
rúcula q.b.
2 colheres de sopa de cebola roxa picada
azeite
sal e pimenta preta moída
Preparação:
1. Tempere a carne com sal e pimenta. Pique-a com uma faca bem afiada, em cubinhos de 4 mm.
2. Junte todos os ingredientes, excepto a gema de ovo e a rúcula.
3. Envolva bem e faça duas bolas. Espalme com as mãos ou utilize uma forma para moldar melhor.
4. Coloque cada bolinha de tártaro sobre pratos cheios de rúcula e por cima uma gema de ovo.
